Lunch Meal Prep: Chicken Burrito Bowls

Ingredients:

1 lb chicken breast
1 bag steamable brown rice
1 can black beans, drained and rinsed
1 bell pepper, chopped
1/2 white onion, chopped
1 tbsp. olive oil
1 cup shredded cheese
Lime juice
Pinch of salt
Pinch of pepper
Pinch of garlic powder
Optional: salsa

Heat olive oil in pan on stove over medium heat. Saute pepper and onion covered for 5 minutes. While cooking, cut chicken breast into easily edible pieces. Coat in lime juice, salt, pepper, and garlic powder. Add to pan and cook, covered, for 7 minutes. After 7 minutes flip the chicken to the other side and cook for around 5 more minutes. While cooking, steam brown rice in microwave and prepare the black beans. Once everything is cooked, separate evenly between four storage containers until you’re ready to eat!
