Lunch Meal Prep: Greek Summer Salad

I love throwing a bunch of stuff in a bowl and calling it a salad. This recipe is exactly that.

Ingredients:

Uncle Ben’s Brown Rice and Quinoa steamable packet
1 Green Bell Pepper, chopped
1 Red Bell Pepper, chopped
1 Yellow Bell Pepper, chopped
1 can low sodium Black Beans, drained and rinsed
1 package of Feta Cheese
4-5 Stalks of Celery, chopped
1  bundle of Green Onions, chopped

Optional Ingredients:

1 can of Black Olives, drained and rinsed
1 package of Grape Tomatoes
1 can of Chickpeas, drained and rinsed
Generous pour of Red Wine Vinegar

Heat up the brown rice and quinoa in the microwave. While waiting until that’s cool to touch, begin chopping veggies and draining and rinsing cans of beans. Combine all of the ingredients in a salad bowl or a storage container.

Makes 4 servings
