Meal Prep Sunday: Pizza Soup

It’s soup season! Pizza soup is my favorite thing to make this time of year. It’s just the right amount of warm comfort food but it’s so easy to make healthy. You can even use Whole30 compliant ingredients to use this to fit that meal plan.

What you need:

2 Jars Arriabata Sauce

1 Lb Italian Sausage

3 – 6oz Chicken Breasts

1 Package Pepperoni (make sure you get the cold kind – much better!)

Then anything you would put on a pizza. I used:

3 Bell Peppers, Sliced

1 White Onion, Chopped

1 Can Sliced Black Olives, Drained

1 Cup Button Mushrooms, sliced

A Pinch of Low Fat Shredded Mozzerella

1 TBSP Olive Oil

This whole thing can be made in one pot. Grab the biggest one you have and heat the olive oil over medium heat. Add in the sausage and cook until browned. Slice the chicken into small cubes, then add it in with the sausage. Cover (this will help keep it moist) and cook until browned. Drain the meat. Add both jars of arriabata. Add in all of your toppings. Stir WELL. Make sure everything has at least touched sauce. Cover, and simmer for 30 minutes. Top with a pinch of mozzarella and serve!
